Can someone point me in the right direction? (Luggage, adapter kits, etc.)

I've searched but maybe I'm not searching correctly. I had the SW-Motech Evo side carrier racks installed on my '16 700x DCT bike; however, I have no idea what adapter to get if I want some bags that are easy on / easy off (not a bunch of straps). Does anyone use saddlebags where the straps go over the rear seat? This is a pita every time you stop for a fill-up. Also, it seems like those saddlebags with the straps might be difficult to carry into a hotel room. Any suggestions? Are adapter kits specific to the side rack or to the luggage? I feel really clueless on this topic. I want to tour but I really want the luggage to be waterproof, lockable, easy on/off and easy to carry to a hotel room. Badda-bing, badda-boom! Thanks for any help on this.
 
If you have EVO side carriers, hard bags would generally be easy on, easy off. The adapters match the brand, and sometimes within the brand, the type, of side bages. For example, if you were to chose Givi Monokey hard side cases that normally fit on Givi PL hardware, you would buy the SW-Motech EVO side carrier adapters for the same. then those bags would attach to your EVO racks, generally just snapping and locking on, no straps involved.

A starting poing would be to look at various hard bag brands and styles, and see which kind fits your needs. I used Givi as an example above because they have a large product line.
