I see the stock tires on a NC700X are 160/60R-17.

The TKC80 doesn't come in that size, but does come in 150/70B-17 or 170/60B-17.

I'm wondering for the NC700X that will be doing 50/50 rides, which would be better and why?

Adventure touring applications generally use 70 or 80 aspect ratio tires, I guess because their taller sidewalls are more forgiving to pinching the tire or damaging the rim against a rock or hard-edged hole.

I too am replacing both of my tires very soon and have been looking at the Shinko 705's. The 150/70/17 for the rear... :{)

No second guessing here.
If my wife chooses to put another set of tires on her new, yet to be delivered bike, I will advocate stock size in front and if she wants a "slightly" more forgiving 50/50 off pavement tire, it will be the TKC70 Rocks we have in the garage in the 150/70 - 17 size. OEM tires may be just fine, but just a little more bias toward the non-tarmac would be my recommendation for her, considering our typical rides.
On a different bike of mine, my V-Strom 650, I really like my experience with the Shinko 805 rear in that size or the Motoz Tractionator GPS in that size
