Update - Decided to do both
Keep what I have, and add the zipper attachment from the jacket to the pants and try that route (Both jacket and pants have quilted liners for colder riding)
AND I bought the Olympia Avenger one-piece suit (mesh suit for summer riding)
I keep mine in the map section of my tank bag. When I get to work I remove and put in the frunk on top of my riding pants that I store there. Reverse for the ride home.

Yup - that's a non-issue for me. But I did add extenders to the mirror stems to bring them out further. No issue with hitting levers at all. Although, I had to remove my hand guards because those would hit big time.
